I love watermelon... unfortunately, my family doesn't care for melons of any sort really.  Despite how much I love this fruit, one watermelon is a bit too much for me.  So, what is one to do with all this sweetness??

I was telling this to my sister-in-law the other day and she mentioned that she freezes watermelon slices with my niece.  I was reluctant to try this because I have tried watermelon smoothies and pop sickles in past years and always ended up with watery messes.

BUT... I tried it!  She was right!!  I cut the rind off the watermelon and sliced it thinly, cutting pieces into bite-size triangles.  I froze them for a couple hours on a pan and took them out to transfer them to a freezer bag.  Eaten directly out of the freezer, it is a sweet, watery and crispy snack!!  Wonderful, I tell you!
 
I am a "snacker"... and this summer, this will be a GREAT go-to for me on hot days!  Thanks, Niki!!

I did google "recipes" for freezing watermelon slices, but I didn't really find any.  One blog did suggest wrapping the watermelon in wax paper before freezing it.  Another suggested sprinkling the watermelon with sugar before freezing.  Another mentioned keeping it covered to prevent freezer-burn.
